Guisano Latin Fusion in Healdsburg

 This is a wonderful little restaurant in the heart of Healdsburg.  Guiso Latin Fusion is Salvadoran cuisine with a lot of freshness and personality.  I had the pupusas revueltas.  Pupusas are corn dough patties stuffed with a soft filing.  Mine was excellent.  The corn was very flavorful and the filling was soft and slightly smoky.  It was topped with an acidic curtido (a cabbagle slaw) and a tomato guiso (sauce).  All the food was very bright with plenty of acid.  It was a very satisfying contrast of taste and textures.  It was a really delicious and quick lunch.
