We were told to arrive early. They don't accept reservations. We arrived around 4:45 PM to
Paper Dosa and joined a small group waiting in the restaurant foyer. (Every restaurant we went to in Santa Fe was very busy.) The cuisine is modern Indian with a focus on South India staples, such as dosa, sambar, rassam and uttapam. The dishes were a bit different from standard fare. I had an uttapam, which is a classic, thick lentil savory pancake. This version was topped with roasted winter vegetables, which was a refreshing and modern update. My friends had dosa, which are large, very thin, crisp lentil crepes. These were enormous! They were served with the stuffing (spicy, mashed potatoes) in a separate bowl, so the dosa stayed very crisp. We also had chicken curry, which was excellent. Fine meal and a fresh interpretation on traditional Tamilian basics. This food is overly spicy hot, so will appeal to most palates.
