The Rose Cafe/Bakery/Bar in Edwards, CO

The Rose was a pleasant surprise.  It is in a new mall, but has a lot of quirky personality and great food.  The bar is small, but has a huge number of bottles.  They can probably make anything.  The front counter has a variety of sweet treats, such as many flavors of macarons.  We were there for lunch after a morning of zip lining.  I didn't take many pictures, because I was so hungry and so tired.  I started out with a fabulous citrus sage shrub.  Shrubs are fruit drinks made with a little fruit vinegar to add some acidity.  I had the "piggy smalls", which was tender pork belly, coconut rice, ponzu and plantain.  It was very filling for a small plate.  My friends had the "rose salad" with dates, avocado, goat cheese, almonds and more.  They were very pleased.  We decided to go to a bookstore up the street for coffee.  Lunch gave us the strength to stroll along the river walk, behind the mall.  It is a paved path along a fast river.
